Cambray Sheep Cheese is a family owned and operated business. Since opening in 2005, nearly every cheese has won gold or 1st place. Each cheese is hand crafted to traditional, mainly French-style recipes. Some are cured for many months in temperature and humidity controlled cheese caves where they require constant attention with daily turning. Frequent hand washing of some cheeses gives them a very mellow flavour. Others are coated and some are left to form a natural rind. The way the cheeses are cured gives them their unique flavour. Health benefits of ewes milk cheese include high levels of calcium and vitamin D (up to 3 times that of goats and cows milk), easy digestibility and a different lactose protein allowing anyone allergic to cow milk products able to enjoy ewes milk cheese. The fats in ewes milk are mainly the good fats so if you
have a cholesterol problem, small amounts of ewes milk cheese are okay for a
treat.
